Indonesian Chicken on Skewers

Ingredients:

1/4 cup Peanut butter, smooth
1 1/2 tsp Coriander, ground
1 1/2 tsp Salt
1/2 tsp Cayenne
1 tsp Cumin, ground
1/2 tsp Black pepper
1 1/2 tbsp Lemon juice
1 tbsp Dark brown sugar
3 tbsp Soy sauce
4 Onions, chopped fine
1 clove Garlic, minced
2 lb Chicken breast, boneless and cubed

Directions:

In a large shallow dish, combine the first 11 ingredients. Add chicken and marinate, covered and chilled, for 2 hours. Place on skewers and grill, basting and turning, for 7 to 10 minutes or until firm to the touch. Serve with rice pilaf and grilled skewerd vegetables.
