Sure, I have two midterms tomorrow, but for some reason, I felt the need to make latkes for dinner. Well, I know the reason - it was because the bag of potatoes was starting to scare me and I knew I needed to act quickly, and the only thing I could think of to use massive quantities of potatoes was latkes. I also introduced my Singaporian roommate and her boyfriend to latkes and they are now converts. I had a bit of trouble maintaining the correct amount of oil - think it would have gone better with a cast-iron pan - but otherwise, the first latke attempt went well. I decided not to make them all tonight, in the interest of time, so I saved the rest of the potato/egg concoction, which hopefully will be fine tomorrow.
